Belle Meade Bourbon Sherry Cask Finish

Our 9 Year-old Belle Meade Bourbon finished in Oloroso Sherry Casks, our first wood finish series release, represents the best of both old and new world whiskey making techniques as it's America's native spirit, Bourbon, that we have blended and finished like a fine Scotch.

We sampled and selected barrels from our Reserve stock and blended only the best in extremely small batches to create a Bourbon of exceptional character. We then aged this extraordinary blend of 9 year Bourbon in Oloroso Sherry casks, which had been used for 20 years in Sherry production, until perfection was achieved.

The final results are, to say the least, remarkable. Rich, intricate, and balanced, this Bourbon is one for the ages. There has never been a Bourbon like it and there will likely never be another.

Winner of the Double Gold Medal and Best Special Barrel Finish Bourbon at the 2015 San Francisco World Spirits Competition, this special barrel finish bourbon is available in select markets and at the distillery in Nashville.

The principal author of the Declaration of Independence and one of the greatest Founding Fathers, Thomas Jefferson was elected the third President of the United States in 1800. During his tenure, Jefferson authorized the purchase of the Louisiana Territory, dispatched Lewis and Clark westward in order to explore the remainder of the continent and repealed the Whisky Excise Tax.

After Jefferson retired from public office in 1815, he often tended to the garden that he had cultivated on his Monticello estate. At the time, it was customary for wealthy farmers, including Jefferso
n, to distill the excess grains they harvested from their farms into spirits (George Washington was one of the country’s largest distillers of rye whiskey). As a result, each farmer’s spirits were unique and reflected the local terrior of their farm. Jefferson’s Ocean Aged At Sea Kentucky Straight Bourbon Whiskey pays homage to Jefferson and the exquisite whiskey he distilled.

Jefferson’s Ocean Aged At Sea Bourbon is matured in American oak casks for approximately seven to eight years on land, before the casks are placed on a ship and allowed to rest for another five to ten months at sea. At sea, the bourbon and oak casks are forced to mingle with each other as the ship rolls back and forth over the water. In addition, the temperature and barometric pressure fluctuations during the sea voyage cause the oak staves to expand and contract, and allow the bourbon to extract more of the tannins and flavor from the oak during its maturation. “This limited release whiskey aged beautifully,” says Trey Zoeller, Jefferson’s founder and master blender. 

As a result of this unique maturation process, Jefferson’s Ocean Bourbon has an aroma of vanilla, caramel and burnt matches. Thick notes of butterscotch, vanilla, brown sugar, and salted caramel dominate the palate, and lead to a finish accented by sweet hints of citrus.

Old Natchez Trace White Whiskey -- This white whiskey honors the tradition of frontier distilling our earliest settlers brought to the hills and hollows of Middle Tennessee.  This whiskey is handcrafted using limestone filtered water, corn, rye and malted barley; that is grown along the Harpeth River Valley in Williamson County.  In keeping with the tradition of TN distillers, our spirit is then filtered through layers of sugar maple charcoal resulting in a whiskey that is smooth, clear and crisp.  The two products making up this brand will be a TN White Whiskey and a TN Rye.

 

 White Maple TN Whiskey -- In commemoration in the last legal distillery in Williamson Co., we are bringing back the pre prohibition label of J.H. Womack & Bros., White Maple Tennessee Whiskey.  Partnering with world renowned master distiller, Dave Scheurich, we have hand selected and blended barrels of premium Tennessee Whiskey.  This blend will be bottled in 5-barrel batches, with each bottling having its own unique flavor profile.

In the spring of 2014, Master Distiller Dave Pickerell began a unique experiment on the WhistlePig Farm. After studying the best techniques of the Old World – particularly Scotch whiskies – Dave and the WhistlePig team paired bonds of 12-year-old rye with premium European oak casks – Madeira, Sauternes, Port, Cognac, and Sherry. After a series of single finish releases and extensive industry feedback,

 

the 12 Year Old World is the product of a carefully selected marriage of three finishes that highlights their distinctive flavors to create an exceptionally balanced spirit. The 2015 San Francisco Spirits Competition Double Gold award winning Old World Series unites the bold attributes of rye whiskey with the grace and elegance of the finest European casks, yielding an ultra-premium straight rye, distinctly American, but hearkening to its stately Old World roots.

Childhood friends, Darek Bell and Andrew Webber, began homebrewing beer and wine in Darek and Amy Lee Bell’s garage. They hit a snag while working on a prototype bio-diesel plant, causing Andrew to remark that making whiskey would be much more satisfying. The idea stuck, and the two soon found themselves studying distilleries and spirits.

Soon after, in 2008, Corsair Distillery was founded in Bowling Green, KY. By 2010, Corsair set its marks where it all started, becoming the first craft distillery in Nashville since prohibition. Corsair’s spirits have been praised in publications like Food and Wine, Saveur, Imbibe, Whisky Magazine, Whisky Advocate, the Atlantic, Time Out New York, and Maxim.com. Corsair’s innovative and adventurous spirits have won over 800 medals at national and international spirits competitions.

  • The history of Elijah Craig is the history of Bourbon. Reverend Elijah Craig was a Baptist preacher and active character in 1800s Kentucky. He was an educator, road builder, land speculator, and built the first paper and wool mills in Georgetown, KY. But it was his gift as a distiller and entrepreneur that establishes his place in history as The Father of Bourbon. ​

  • Today, Heaven Hill Distillery preserves the Bourbon making traditions developed by Elijah Craig. Each bottle of our Bourbon is crafted with the same method used by Elijah over two hundred years ago: local corn and grains are milled and mixed with limestone-rich Kentucky spring water, then fermented and distilled. After years of aging in charred oak, our Master Distillers select the most complex barrels to become Elijah Craig Small Batch, Barrel Proof, and Single Barrel Bourbons. Our rich history and craftsmanship can be savored in every sip.
